What is it about UK water that causes naturally high nitrate?

Most of the nitrates in UK water are leached from agricultural land, its estimated that 70% of nitrates in UK water come from this source.

yeh I'm in an agricultural area of Illinois and our tap water is very rusty and has sediment in it and has high nitrates. Letting the water sit for a week and then taking water off the top for the tanks seems to solve the sediment issues, but the nitrate levels still bother me.
For that reason I try to use purchased or 'imported' (from my parent's house in the chicago burbs) water =x
