I have a 2.5 gallon that mysteriously shows no nitrate at all, even lately when I have been intentionally neglectful of water changes because I believed the lack of nitrate was why the plants were growing so slowly despite appearing in perfect health.

These are extremely intelligent creatures, so after being in such a horrid and stressful situation, it'll take a little bit of time, effort, and alot of love to bring this guy out of his shell. From the looks of things it will be worth it. You won't regret it that's for sure.
No worries, he'll be following you up and down the tank like a little puppydog begging for food before you know it.
He's lucky to have found a friend like you.
