Tank Mates with GSP

I'm looking to start up with a GSP maybe two.
I currently have a 40Gal and 80Gal Tank.
I plan on having him in the 40Gal with FW, then moving him to the 80 with BW when he gets older, then keeping my 40Gal running with his tankmates in it.
I'm hoping for some "fancy" fish that are entertaining and obviously fast enough to not get eaten, although I'm ok if they do get ambushed.
Do you have any suggestions that kind of tankmate?
Would 40Gal be enough for a couple of GSP? And for how long?
Is there a # of Gals that each GSP needs to be happy with their territory? I know Red Belly P's are 20Gal each.

you could probably have 2 GSPs in the 80g, but only 1 on its own in the 40g

30g per GSP. They are generally very agressive and territorial. Even with 2 in the 80g you will need a well decorated tank with lots of hiding places, water current, and borken lines of sight to keep them happy and peaceful.

Non-puffer tank mates are not recommended.
