What's the smallest tank I need to have enough Red Cherry Shrimp to breed?

If you're not experienced with shrimp and/or nanos, at least 10g. Shrimp need stability. Cherries are really really hardy and thrive in a wide range of conditions, but stability is still key. They will also be much happier and breed better in a planted tank.

I have cherries in a planted 2.5g betta tank...

The cherries breed like crazy in that tank, so they don't need much.

Agree with LilGreenPuffer.
For full physical and social development, at least 10G (or more) with excellent parameter and water quality & non predatory fish.
This critters are strong and adaptable but that doesn't mean they will live comfortable in any situation.
