Would a Simese Fighter be ok in a Snail breeding tank or will it eat the snail eggs?

I wouldn't be worried about the eggs; the betta might eat the snails (or just nip them to death), or it will gorge itself on the snails' food (which is really bad for the fish). If this isn't the case, then it should be fine - just make sure to keep up with the water changes, since snails are really messy. You'll also need a heater, unlike you would with just snails.

Ive seen a few fighting fish the other week in a shop but they look like there tails are to long for them, it makes them swim funny. Where are these fish in the wild i bet they get eaten alot.

The wild ones don't look like the domestic ones 
It is absurd to talk of one animal being higher than another. We consider those, when the cerebral structure/intellectual faculties most developed, as highest. A bee doubtless would when the instincts were.

I had to take mine out of my snail tank because he ate the snails, even the huge ones, and always ate the eggs. It works for some, and not for others. It's really just a hit or miss thing.

It's not advised to keep any fish in a snail breeder
It's amazing how easy maintenance is. If done regularly and thoroughly

I left several young crayfish in a snail tank, they were completely assimilated.
