Keep a very close eye on your ammonia and nitrites, most of the time you're going to have some die off in live rock, unless you transported it completely under water. Even if it was just a 10 minute drive across town.
Yes, you can buy the cheaper dead rock and just a few chunks of live rock, and the live rock will seed the dead rock eventually.. that's a much cheaper option.
I wouldn't worry about the hardness of the water, saltwater is naturally very hard

Updates: Rudy and Winky are doing AWESOME. Rudy is the brains of the organization and Winky...well, let's just say his name rhymes with a cartoon character mouse that isn't the brightest bulb on the Christmas tree. Eating mysis shrimp once daily, eagerly; tank has levelled out at 0 nitrites and somewhere between 10 and 20 nitrates. Thanks for all the help, everyone!
