I'm guessing they probably do in the wild as they must be compatible just like different species of dogs mating. I'm sure this is what's happened with some dogface puffers and stars and stripes being mistaken for each other (with there being dark and light versions of S&S puffers)
I'm suprised that no one has tried to pair up weird Puffer combinations and create new amazing crosses and sold them for loads of money!
puffertt77 the Guinea fowl puffer is golden in color when younger and changes to the darker spotted color as it gets older (although I don't think there coloring changes when in the aquarium setting). Your first video posted that is what you are seeing it's color changing.

The breeding of salt water fish in captivity is something that is just being accomplished. I could be wrong so someone please correct me but I don't think there are to many of the salt water puffer species that have been breed in captivity.

I just read on another forum (it was in 2003 though)
''juvenile Arothron Meleagris (golden puffer) are black with numerous white spots on their body, so if you want a golden one you should buy one that is already golden because they rarely change colour in captivity.''

Maybe some Guinea Fowl Puffers change to Golden when they get older?!
