Thats actually not flesh, it's solid. The only soft tissue you see is the little red part whith the white bit attached to it. Are you sure its an infection and not a graze or bump injury from the decor or other puffer? If your water is spotless as I think it is becuase you got them to breed I would think an infection is less likely.
