Are there any plants you can buy that can live in brackish water?

There are no plants in the trade that will thrive in anything beyond light BW until the water is at high BW where you can start using macroalgaes such as Caulerpa (if it is legal in your area). Between specific gravity 1.003 (1.005?) and ~ or >1.018, you are out of luck.

I was having a convo the other day with someone that was wondering why more native brackish plants aren't available in the trade. Any thoughts?

There are several grasses but they tend to be protected habitats or protected themselves.
