what was your ph before co2. you may have a high buffering capacity in your water.

usually around 6.5 ~ 7.5

I am wondering if the plants are consuming the CO2 at such a rate that I am actually low!

The plants are HUGE now.. and some are growing beyond control... I'll have to open up a shop!

What's the KH? The KH does affect the PH.

KH hasn't changed really. Tested and got a 5.5~6. According to charts I'm low on the CO2 level when before I was in the good zone (11ppm)
Now I would be at 1.8 ~2.9 ppm. Lat time I was in that range I upped the CO2, went to the green zone and now I'm back in the low again :(
