I've seen dog puffers turn from their normal colour to a deep shade of golden/yellow. Does this mean anything in particular [mating season, hunger, stress, etc]?

Color change can indicate stress

They change colors throughout there lives (I believe it goes from brown to the whiteish color to yellow to blue or something like that, not very common in captivity)
