I have been going back and forth and simply cant decide whether to house f8's (how many should I?), or a GSP in my 30 gallon tank. What would everyone recommend? Thank you so much for your advice.

2 figure 8's or 1 GSP.
I'm bias because i've got figure 8's myself but you would save £'s on salt and they seem to be a bit more friendly than GSP's so you could potentially think about 1 figure 8 and a tank mate or 2 - nothing slow moving or with tempting fins though!
Have a read of both articles in the pufferpedia under the learn tab and see which one suits you best.

Yeah, I've heard f8's are more friendly and more personable with their keepers. I like puffers due to there personality and the fact that they are more of a pet than just a TV that you feed and clean. lol I think f8's are a better idea. Still open for discussion. If you think I'm better getting GSP then please, do tell why. By the way, the tank is going to be one species. I want to ideally showcase either f8's or a GSP.

The articles are in our Library. Profiles & pics of puffers are in the Pufferpedia.

I think it's great you've identified this as a good piece of practice from the word go: mixing puffers is typically not a great idea, and mixing them with other species can be hit and miss. You could, in a 30G, work with a pair of F8s as centrepiece fish.

It depends on the individual temperaments. My GSPs are more friendly than my F8s. But, definitely changing their water is much easier because it takes very little salt.

Kudos for you doing research before buying the fish! If you're looking for more than a sincleton in that tank (GSP), then F8s are the puffers for you. You could add chromides or several different species of BW gobies to that tank.

I recently decided after a great deal of research to try and find some Figure 8's here. Not sure why I chose them but it sort of just came to me. Planning on starting my tank up after I get back from a trip in August.
