For pink fish your best bet would be a single betta or maybe a few guppies, the glofish though i think they are genetically altered are pretty cool looking and come in bright pink.

I like the the idea of African dwarf frogs for the Army tank..
And a good hunt for some female bettas would probably get you a pinkish female or two, avoid chain stores and search through mom and pop shops..expect to pay more than what they cost at the chain stores

Dwarf frogs are not something I would trust a kid to take care of, though. The little guys are nearly blind, so their food has to be very actively moving right in their face, or very stinky sinking stuff. The only clean way I've found to feed them is from a dropper with blackworms in it spot feeding each frog.
Regular African clawed frogs are real easy to take care of though. Demand food all the time and eat nearly anything. They get big though, especially the females.

Well she's only three, she wouldn't be taking care of anything... well she might over feed but that's about it.
I found the perfect coloured fish today at Petsmart... they have them called "Flamingo Guppies" but these things are amazingly pure pink! Gorgeous!
And I was also inspired for a background and substrate. All I need is to pick up an appropriate tank and it'll be perfect... and find the right furniture... surprisingly toy stores nowadays suck when compared to what I had as a kid.
